  • 1 slice sourdough bread, toasted
  • half ripe avocado, mashed
  • squeeze of lime
  • 20 g. feta cheese
  • 1 stick celery, sliced
  • 2-3 mint leaves, torn
  • salt and pepper, to serve


  1. Combine the mashed avocado and lime juice and season well.
  2. Spread on the toast.
  3. Spread the celery slices over the avocado then sprinkle with the feta and torn mint leaves.
